How much weight do we put behind these statements? ie how literally should they be taken?

ie if you pray on this night, it's equivalent to a thousand nights of prayer. If you do this prayer, it's equivalent to going on both a Hajj and an Umrah.

I remember I knew someone once who had a nice chart so they could check on how they were doing - 100 times normal seems like a good place to aim for apparently.

Unless you read something to the contrary from the Ulema I would accept it as being literal. However, doing tallys, charts and records seems silly. Thawab is a spiritual matter and Allah Ta'ala will accept your good deeds if He wills and by His Mercy. People should be more concerned about their bad deeds.
