I would recommend Minhajul Abedin by Imam Ghazali and Bahisti Zewar...also Islam:Beliefs and Teachings by Ghulam Sarwar

For a very basic but excellent, knowledge filled book, I recommend Riyahdu Saliheen.

-If choosing shaafi madhab then maqasid (i wouldn't suggest reliance until later on or unless she is a law student or somethin -might be too much for a new muslim).
-i would suggest ghazali's inner dimensions as the brother has above.
Also the following suggestions will help make her more 'homely' in islam (of course she could already be at that level.) especially if she has a habit of reading western literature:
-Quran: Thomas Cleary translation
-Martin Lings: Muhammad (saw)
-Unveiling Islam (edited by abdul hakim murad)
-Man and the Universe (Mostafa al badawi)
-Becoming Muslim (shaykh nuh)
-Purification of the Heart -Shaykh Hamza
Later on i would give her "early Sufi women of as-sulami" and if she wants go get into the history (especially after reading Lings' book) i would go with a translation of travels of ibn battuta.
Also i would recommend all the Shaykh Hamza Yusuf talks/dvds, they beautifully blend secular knowledge and islamic knowledge and makes one feel at 'home' in the modern world as a muslim without being disconnected to Allah. Oh and Harun Yahya videos are a must especially the 'nature' ones.
Also to give her the feeling of 'unity/diversity' i would get her some Zaid Shakir talks/cds (about malcolm x and such) - a book on chinese muslims and on andalucia perhaps.
Also i would give her lots of dhikr cd's - something to slowly replace the 'need for music'.
Also the 'Islamic Marriage' book by Hedaya Hartford - it has some beneficial stuff especially for new muslims

I would suggest Stories of the Prophets, the simple version.
So that she can relate to past history and names of some of the Prophets whom she might Know
