walaykum salam,
Yes, I have.
They have one course called essentials of islam, in shafii or hanafi version, where they teach you the 5 pillars based on the risala of imam habshi. It would be good intro to islam.
As for me, ive done 5 of their nahw courses, some theology and logic. They were excellent mashallah, the teacher is a genius. He applies the matn jawhara at tawhid, to modern needs, in such a way so find any atheistic doubts dispelled without even asking questions, yet all the while still explaining the whole matn so you have a full understanding of the text. I don't know what commentary he used, but I'd say he used several in order to create the course.
For this brother, their aqida course on aqida tahawi would be good. Studying theology is excellent for iman, it gives certainty. You would be surprised how much benefit you get from formally studying texts in theology like this, even online, I never felt like I was missing out on anything essential by it being online.

If you want to go to Dar al Mustafa and don't know Arabic, you can study Arabic at Badr language institute first which is in the same city (Tarim). It is linked with Dar al Mustafa.

If you're an individual who may find it difficult to adapt to a new country/culture etc. then perhaps the UK would be more of a wise move. There a many institutes scattered across Britain. May Allah make it easy for you, ameen.

Yes, most of the Darul Ulooms are more geared towards 11-16/19 year olds, however there are institutes such as Ebrahim College, Sirajul Uloom, Kawthar Academy and As-Suffa Institute just to name a few, which are more aimed towards adults/those who have other commitments. Bear in mind that most of these may be on a part-time/evening basis.

There is a really good one in Liverpool called greensville trust. It is run by Sheikh Ibrahim Osi-Efa (Shafi'i) and Sheikh Haroon Hanif (Hanafi). More information on their site. http://www.greensvilletrust.org/micro_madrasah.php

As salamu aleykum, is Badr Institute still operating? I cannot find anything on it online. There is only some very outdated website. Thank you for any info.
